I gather Celine Sciamma wanted Floriane to illustrate the tragedy of great beauty - that that's all anyone sees of you, or all they're interested in; they all want a piece of you, and it makes you cynical and hard in defense.
Floriane is surely rather narcissistic, and shockingly callous to Marie, but she is also a really tragic figure. For once in her cold, isolated life she starts to feel something for another person, but then "quickly crawls right back into her shell", as Adele H wisely put it in an interview.
